Stuffed Peppadew Peppers | Cuban With A Twist | Episode 79
Stuffed Peppadew Peppers Ingredients: 20 to 30 Peppadew peppers* 3 slices of Applewood bacon (or bacon of your choice) 6 oz. of olive goat cheese* (may substitute with cream cheese, fold in approximately 6 pitted green olives) 2 orange slices (chopped) 3 fresh basil leaves (chopped) Directions: 1. Place bacon on cookie sheet and bake for 15 minutes at 375 degrees. 2. Once the bacon is cooked pat dry with a paper towel to remove excess grease. 3. Chop bacon into bite size pieces and place in small mixing bowl. 4. Add chopped basil, chopped orange and goat cheese with olives to bowl. Mix together until well combined. 5. Rinse away the oil that the peppadews are stored in, place peppadews on serving platter. 6. Stuff each peppadew with ½ teaspoon of filling. • Peppadew peppers can be found fresh at an olive bar at your local grocery store or can be found on the grocers shelves in jars. * If you are unable to find pre-made olive goat cheese, chop up 6 olives (green) and add to 6 oz. of softened plain goat cheese or cream cheese. All of these products can be found at local grocers and/or are available at a local Whole Foods.
